Emmi, a Swiss company that helps local producers market their cheeses internationally, has selected over 270 village cheese dairies that produce cheeses from fresh milk using traditional recipes and methods. While most Americans think that Switzerland only produces "Swiss Cheese," this small Alpine country actually produces over 300 types, ranging from soft-ripened varieties to triple creams to hard grating styles. This assortment contains four of Switzerland's finest.

Emmentaler: This classic, nutty cheese is named after the valley of the river Emme. It is still made using traditional methods by small village dairies, from farm-fresh milk delivered twice a day, as it has been for over 450 years.

Gruyere:This extra special delicacy from the Gruyere district of Switzerland is well known as the basic ingredient in fondue. But with its delightfully nutty, spicy, full flavor, it is delicious as a table cheese as well.

Le Marechal: Made since 23 AD, this hard grainy raw cow's milk cheese is aged for 18 months. The Swiss enjoy it shaved in paper-thin slices and served as an appetizer with air-dried beef and tomatoes.

    We spent our honeymoon in Switzerland and ate these cheeses often during our stay. Since I've been back, I've been longing for some of the cheese I tasted over there. This order really hit the spot! I need to go back...
